El Celler de Can Roca: A Perfect Trinomial

A sensory journey between family memory and innovation

The equilateral triangle of culinary perfection in Girona

Girona’s hospitality elevated to the highest global distinction

With three Michelin stars and four decades of history, El Celler de Can Roca remains the absolute benchmark for emotional cuisine. The Roca brothers’ project fuses tradition, science, and an uncompromising ecological commitment in Girona.

The evolution of a lineage dedicated to hospitality

10/03/26

The genesis of El Celler de Can Roca lies in the warmth of Can Roca, the neighborhood bar where the parents of the three brothers transmitted the value of service. What began in 1986 as a small annex to the family business has become, after its move in 2007 to the current tower in Can Sunyer, a temple of international worship.

The space, which combines a clean aesthetic with a 250 m² cellar guarding 60,000 bottles, reflects a serene maturity. In 2026, the establishment celebrates its 40th anniversary, consolidating a business model based on the “perfect trinomial”: an ideal balance between the savory, liquid, and sweet worlds. This trajectory has not only conquered critics but also integrated the Michelin Green Star as a testament to its rigorous commitment to sustainability and local produce.

The shared mastery of the Roca brothers

The establishment’s success lies in the symbiosis of three brilliant and highly specialized minds.

Joan Roca, the eldest brother, is the architect of the savory kitchen, globally recognized for his ability to transform Catalan memory into avant-garde techniques like sous-vide cooking. Josep Roca, maître d’ and sommelier of extraordinary sensitivity, manages the harmony of the experience with a wine narrative that seeks the soul of each producer. Finally, Jordi Roca, the pastry chef, brings the irreverence and creative genius that closes the menu with desserts that are authentic pieces of sensory engineering.

This team, supported by professionals such as head sommelier Audrey Doré, operates with surgical precision where the human factor and generosity remain the backbone of every service.

A narrative of flavors in a unique tasting menu

The current gastronomic proposal focuses exclusively on the “Festival Menu” (€315-325), a succession of about 30 steps that narrate the Girona landscape and the family’s travels.

The meal begins with a display of appetizers honoring the house classics, followed by iconic dishes such as marinated Palamós prawns or octopus civet. The Rocas’ cuisine is defined as liquid, technical, and deeply rooted in the land, where ingredients like eel or duck are presented with crystalline purity. The wine pairing, designed by Josep Roca (€155), is not just an accompaniment but an essential part of the sensory choreography.

With a waiting list of up to eleven months, each reservation represents access to a world where craftsmanship and innovation coexist in a silent and perfect dialogue.
